Wedding - Kenilworth Homestead

We have been very lucky to be able to cater for a beautiful wedding at the picturesque Kenilworth Homestead. A delightful group from Brisbane enjoyed the rustic surrounding and the rolling countryside. A great place for a wedding. Even the kitchen was rocking with the unique sound of Brisbane band Benjam.
Here is the food that David and Michelle's' guests enjoyed:
- Peking duck breast with wombok and nectarine jam on spoons
- Falafel fritters topped with spiced candied pumpkin and chilli labneh
- Kaitifi wrapped prawns with lime aioli
- King prawn and baby snapper dumplings
- Pickled vegetables encased with Nolan's private selection rare roast rib eye
- Lamb kofta with cucumber and mint riata
- Tartlet of braised leek, manchego and tarragon finished with tomato and herb salsa
- Caramelized pumpkin and fetta tart topped with onion jam
- Petite bread roll filled with grilled meditaranian vegetables with fetta and spicy chutney
- Mini beef burger with cheddar cheese, caramelized onion and tomato relish
Bowl dishes of:
- Beef bourguignon with creamy potato mash
- Mushroom risotto topped with pesto
- Soy and ginger glazed pork belly with wakame salad and bean shoots
- Moroccan lamb tagine with cous cous

Capelli on Duke put Gympie on the map

We are super excited about the recent release of the Queensland Good Food Guide 2012
We have rated an impressive 14/20 (one point off a Hat) and are rated highly with some of the best know restaurants on the Sunshine Coast and Brisbane.
We are very proud and estatic at being acknowledged for the quality and hard work that our whole team puts in.
Here is what Editor, Natascha Mirosch had to say:
Visitors to this old goldmining town might discover what locals already know - there's still gold in these hills, in the shape of an unassuming restaurant in an old corner house.
Take a seat on the lovely jacaranda-shaded deck and enjoy food that's pure city sophistication down to the micro herbs. The menu consists of tapas and more substantial raciones plates to share as well as a standard mains section. Chef-Michael Hehir makes good use of local produce. Delicate zucchini blossoms still attached to pinkie-sized zucchini are stuffed with risotto, then encased in a tempura batter and served with a dill aioli, while sweet Hervey Bay scallops are simply grilled and finished with house-grown herb and garlic salsa. Eggplant fritters fried until crisp and sprinkled in smoked paprika and served with mint and lemon-infused labna are moreish but for something more substantial, the Kilkivan organic duck served with white figs marinated in Pedro Ximinez and a bitter Bolivian chocolate-infused jus is way too good to share.
The Fairfax-produced guide has been printed by The Sydney Morning Herald and The Age for southern diners since the early 1980s and, while there has been a previous online version here, for the first time this year Queensland has its own guide in book form.
Food critics have spent the past six months travelling the state, sampling hundreds of meals and rating the restaurants out of 20. Those who rated 12/20 or higher made it into the guide.
Restaurants that achieved 15/20 are considered very good and awarded one hat; scores of 16/20 or 17/20 are awarded two hats; and a rating of 18/20 or higher gets the premier score of three hats.
"The New South Wales and Victorian Good Food Guides have become institutions within their own right, renowned for being independent - Queensland will be no different," said Ms Mirosch at the launch of the guide this week.
"Receiving a hat or even just being good enough to be included in the guide is a pretty big deal."

Poco Capelli - Kids Holiday Cooking Classes

Sunshine Coast Cooking Classes - Poco Capelli
Gympie's own Kids cooking classes were held at Capelli on Duke Restaurant this week. We had some hot tropical Queensland weather to contend with however the kids were fantastic and the classes were a hit. The kids managed to find the coolest place it the kitchen and were often found 'stocktaking' in the cool room.
Capelli Foods are holding classes over the holidays for the Sunshine Coast, Noosa and Gympie area. All children 8+ of any level of experience who are keen for a fabulous cooking experience are welcome.
Teaching kids aged 8+ we held a 2 day course coving both lunch and dinner. The first day was the preparing, cooking and sitting down eating together a menu of bread, fattoush salad, marinated chicken skewers, lamb koftas and every child's favourite - pavlova with vanilla cream and macerated berries. The second day the kids prepared a dinner party for their parents, who enjoyed chicken won ton soup, bread (of course), beef Wellington with slow baked sweet potato, pumpkin and carrot and local beans and to finish chocolate pudding with cream.
A mix of skills were taught and each child was encouraged to try something new (and taste new food as well), as we had a variety of skill level the kids were kept busy with different jobs. From food processing, chopping, piping, mixing, crushing, cracking, separating, kneading, stirring, frying, baking, layering, rolling and of course eating; our days were very busy.
The highlight for the kids was the fresh bread. The quality and the joy of eating warm freshly baked bread was enjoyed by all the kids - who wouldn't love that!!

Queensland Good Food Guide
All of us at Capelli on Duke are super excited to hear the news that the Fairfax Groups are finally publishing a Queensland Good Food Guide. Being originally from Victoria we have grown up with the Age Good Food Guide and it has not only guided our choices of great places to eat but has also given small rural locally own Restaurant and Cafes the chance to be noticed and applauded for fabulous food.
Michael received his first mention in the Age Good Food Guide at Bohjass Wine Bar in Shepparton in Victoria, we were very proud of his score of 14/20 just one point off receiving a HAT. Michael had only been a head chef for his second year and was duly noted for his wonderful cooking. Since moving to Queensland we have sorely missed this opportunity to be recognised for the fine food that we proudly produce so as you can imagine we were ecstastic to have Natascha Mirosch in our Restaurant recently eating (and reviewing) our food.
To be a part of this book will finally put Capelli on Duke, Wine Bar and Restaurant on the radar of food lovers from around the country. There is a chance for us to be recognised and celebrated and or course to continue to do the thing we love the most.
Stay tuned for the Queensland Good Food Guide 2012 out in May and look out for Capelli - we might just be good enough to get a mention...(fingers crossed...)

Capelli was recently mentioned on the ABC radio, where chef Michael Hehir was interviewed by Annie Gaffney, host of the program 'Mornings with Annie Gaffney'.
Michael is inspired by the wonderful range of local produce around Gympie. Zucchini Flowers (fresh picked) and Kilkivan organic confit duck are specialties - view a recipe for Confit organic Kilkivan crispy skin duck.

Capelli at Flavourfest and Flavourfeast in Gympie

At Capelli Foods we did our bit to support local Gympie and Sunshine
Coast produce at this year's Flavourfest and Flavourfeast Festival. We
showcased our very popular tapas as well as our pork belly, chorizo and
chickpea, beef pinchos and marinated mushrooms. The dishes were so
popular we had sold out by 1.30 – next year we will bring a lot more
food!
It was fantasitc to see so many local producers gathered together to
show their latest and favourite products. The day finished with the
dinner as four local chefs showed off their skills using fresh local
produce. Michael provided the main meal of an alternate drop of crispy
skin duck or Nolan’s private selection rib eye served with local widgee
pumpkin and white sweet potato crush, Wilson’s pocket Zucchini flowers
and Goomborian green beans topped with Capelli own house made jus.
Michael loved it and was in his element rubbing shoulders with celebrity
chefs Rita Macali, Ben O’Donoghue and Matt Golinski. It's always great
to gain inspiration and ideas for our own beloved Sunshine Coast restaurant, Capelli on Duke
